Ingredients
500kg potatoes
2-3 rashers bacon, diced
3-4 spring onions, sliced
3 eggs
For the dressing
1 cup mayonnaise
1/2 cup sour cream
3-4 tablespoons Dijon mustard
Method
Cook potatoes using your favourite method until cooked but still firm. Set aside to cool.
Boil eggs until hard, around 10 mins. Set aside to cool.
While potato and eggs are cooling, fry bacon until crispy. Set aside to cool.
Peel eggs and cut into quarters.
Once cool, place potatoes, eggs, bacon, and spring onions into a bowl. Add mayonnaise, sour cream and Dijon and stir to combine completely.
Serve immediately.
