Ingredients
Your favourite potatoes, about 1 medium-large potato per person
Method
Preheat oven to 220 degrees Celsius.
Peel potatoes if you prefer skinless wedges. Cut into wedges or chunky chips.
Boil a pot of water that's enough to cover the potatoes, and transfer wedges to pot. Boil potatoes for 2 minutes and then drain immediately. (This process is called par-boiling. The edges of the potato will break down in the water, so that when they hit the heat of the oven they'll go nice and crispy.)
Transfer par-boiled wedges in a single layer to a lightly oiled and lined baking tray. Give it a bit of a shake to ensure the potatoes aren't going to stick. Season with salt and pepper if desired and then bake for 40 minutes, turning once.
Serve cooked wedges immediately with your favourite toppings.
